Spinach Turkey Meatballs With Cajun Tomato Sauce.

I based this recipe off of Gina’s Skinny Taste Italian Spinach Turkey Meatballs. I changed a few things here and there, and whipped up my own sauce because of the items I had in the fridge.

Servings: 6.5 Serving Size: 4 Meatballs Calories 183 Protein 20.7 (May vary depending on brands used)

Ingredients for meatballs:

1 lb ground turkey 
10 oz frozen chopped spinach, thawed and drained of all liquid
2 slices Ezekiel bread  
4 tbs egg whites 
1 clove garlic, minced
2 tbsp fresh parsley or italian seasoning 
1/4 c parmesan cheese
salt and pepper

Ingredients for sauce:

1 large green pepper
2 medium tomatos
1 can diced tomatos
2 tbs olive oil
1 tbs cajun seasoning
1 tsp chili powder
1 tsp paprika
1 tbs garlic powder
2 tbs louisiana hot sauce (or hot sauce of your choice)
dash of salt and pepper

Preheat oven to 375.

Using a large skillet, on medium heat  add 2 tbs of olive oil. Cut peppers into thin slices, and put into skillet. Cut tomatos into slices, then in half again. Add to skillet. Put 1 tbs of cajun seasoning. Cover for 10-15 minutes. Once peppers begin to get soft, and tomatos are runny, add diced tomatos, cajun seasoning, chili powder, paprika, garlic powder, salt and pepper and hot sauce. Cook until peppers are soft, occassionally stirring.

Wet bread with water then mash up with your hands. Add to large bowl and combine with uncooked ground turkey, spinach, egg white, garlic, parsley/italian seasoning, cheese, salt and pepper. Mash with hands. Mix all ingredients well until thoroughly combined.

Spray cookie sheet with cooking spray. Using a 1/4 cup measuring cup, measure meat, then divide in two so that each meatball is 1/8th of a cup. Roll into little meatballs. Cook for 10-15 minutes. Take meatballs out, turn each meatball over. And let cook for 15 more minutes, or until lightly brown.

 Feel free to use a traditional italian sauce, or no sauce at all as these meatballs are delicious either way! If you are looking to make these for a party as an appetizer, use a small ice cream scoop and place a toothpick inside once they are cooked, with a side of your favorite sauce! Enjoy!
